I really like the simplicity of the round knob stock grip but would like help shaping it correctly. Please! There must be more here than meets the eye at first glance!

Are you referring to the type used on Hepburn rifles?

Yes, like the hepburn stock. How does the width of the grip compare to the width of the stock? The whole thing looks like a straight stock with a grip part added, and that is ok!

My problem is that I have to make something before I know how it will look and as this is my first serious attempt at rounded grips, I it would be nice to get it right the first time!

I don’t think there is any mystery to shaping this style grip.  If you have shaped a stock with a pistol grip before, and liked what you got, you shouldn’t have any problems.  

I would get the grip side shaped and blended into the stock sides, bottom and top, back to the buttplate. By this I mean the sides would mostly still be flat from the ears at the rear of the frame.  Then get the grip profile correctly shaped with the rounded bottom. Then with centering lines drawn on all sides and bottom, shape everything to the final modeling.  I usually do everything by eye but you may be able to make some gages to help make the modeling the same between the two sides.
This is simply done by taking it one step at a time and not trying to model and shape at the same time.  Shaping gets you the roughed out grip dimensions and modeling take it down to the final look and feel.

The Hepburn grip area is no different than any pistol grip stock, with the exception of the shape at the bottom. They aren't wider than usual, and actually quite easy to shape compared to those with an S design like the pistol gripped Remington Rolling Blocks.
It's the checkering on these rounded grips that always amazed me to see how nice it's done with the curves going both ways. Remington obviously had some good checkerers to do these so well.
Without digging one of my Hepburns out, here's a view from the top of my .32-20WCF Hepburn that shows the grip area not protruding any.
