Bison with a .54 Cal Hawken muzzleloader.  Great Pains bullet.  Low chest shot.  Travelled all of one step and fell over.  Then the real work began.   
Field dressed, Indian quartered, and loaded all by hand.  The wet hide was all that two of us could lift and load. Four year old bull. Very tasty. I could live on that year 'round. Actually took two years to eat with the help of two hungry teens.

Very nice!

I was blessed to harvest two Bison.  A four year bull with my Shiloh LRE 45-70.  We ate on that one for two years.

4-5 years later I got the trophy bull fever.  I shot a herd bull with my 1886 Winchester 50-110.  Right in the brisket at about 100 yards.  He just stood there looking at me for about a minute; then just fell over.  13 year old, tough enough that we had mostly salami and sausage made.

I would love a shot at one like this.  Tasty for sure.

Not only for what you used to shoot it but more importantly all of the meat that you where able to eat and to also share with others.

Hornady .54 cal 425 gr. HBH Great Plains Maxi-Bullet
So far I have used it on the Bison and a Black Bear
No complaints regarding performance.
