Being mildly paranoid I have made a drill jig to center the drill. Center over screw head/hole clamp in place and drill. I like the idea of coming in from the non-head end.
A bit out of the box but certainly a good idea.

Not out of the box at all. For over a century drill jigs were used to assure precise hole locations in production work.  The high precision machines that made the jigs became known as "jig borers", and are still called that today.  Company I worked at in the '80s remanufactured them.  CNC put the company out of business, but I had moved on by then.

Jigs are indeed a good approach and I recently made one for spacing out the 7.2 scope block holes. And its also adjustable for 9 or less than the 7.2. And or to copy the existing that are seldom exactly the same when making a scope rail for someone elses modern scope use.

Problem with these sets is that they may not have a small enough one for very small screws

I would tend to think once one has the hole drilled for a tapered type screw extractor for a smaller screw. When you tap it in the hole it will expand / flare the newly drilled hole and making it even harder to remove the damaged screw.
