Aydt system rifles

I have been looking at a lot of photos of Aydt system Schuetzen rifles recently and I'm wondering what the purpose is of those awkward looking U shaped chunks of metal on the left side of the reciever. Having never handled one I can only assume that they have something to do with safety, extraction or opening beer bottles, curiosity has got me.

They are used in disassembling the action.  The whole action can be taken apart for cleaning without tools.

I seem to remember that one is for takedown and the other is the extractor?

That's right.  IIRC, the outside one is for taking the action apart.  The inside one is part of the extractor.
