Needed to do a chamber cast so figured I would take some pictures at the same time. Now need to sit down and work out what it is exactly..... 10.4 x 38 perhaps? Will include some pics of the breach block in another posts, appears to be rim and centre fire.

Front and rear, note the serial number stamped on the rear face, this is also found open the front face of the receiver and the rear trigger tang and is the last two digits of the barrel stamped serial number

The number one stamped near the action face on the bbl also appears on the extractor but no where else. Indication of rim size maybe? I think the 27 shown inform of the forearm key/loop may be the year of production but this is imply a guess based on other European single shots having production/proof date on them.

I think you were spot on with calling it a 10.4x38R Swiss Vetterli as it was made in both rimfire and centerfire. St Gallen was a center of target arms making with many fine single shot pistols being produced. A beautiful rifle, by the way. Thanks for all the pics. Oh, the military rimfire cartridge was dropped in 1889 and there wouldn't have been much point in making the rifle convertible much after this so I put its date of manufacture closer to this date.
