Even if the top and bottom surfaces are not parallel to each other, I would think that a constant delta (rate of change) obtained from the dial indicator should allow you to conclude that the surface, while not necessarily true, is flat.

As guessed, all under 0.001" flatness.

Measurements taken at 5 points on each with CMM (above corners of the mould and center).
