For a linseed oil finish, I like the Minwax Antique Oil Finish.  Finish sand and raise the grain, don't cut it back, then wet sand the first coat of finish in with 320 grit wet or dry paper.  Let it cure for three or four days and wet sand another coat in.  If the wood is really porous, do it again.  After it's cured, you can dry sand it and start laying down finish coats.  You may need to build up about three or four very light coats, using your palm to rub it in, letting it cure between coats.  Wet sand with water using 600 grit wet or dry and if everything looks good, rub in one last coat.  It may take two or three weeks to do, but it's a good, durable finish and is easily repaired if needed.

Both Dave and David are offering excellent suggestions. For the custom rifles I build, I use a modified linseed oil and proceed in about the same process. I won't repeat myself on procedure as these two guys have said just about all you need to know to get your hand rubbed finish. The only thing I will repeat, is don't get in a hurry, and you'll have something to be proud of.
